Okay, so “raw tonight” – it’s not as crazy as it sounds, I promise! I’ve been trying to incorporate more raw foods into my diet, and tonight was the night I decided to go all in. No cooking, just pure, unadulterated goodness.

Prepping the Goods
First things first, I hit up the grocery store. I’m talking a serious produce haul. I grabbed:
- A bunch of colorful bell peppers (red, yellow, orange – the works!)
- Some juicy cucumbers
- A couple of ripe avocados (gotta have that good fat!)
- A big head of romaine lettuce
- A handful of cherry tomatoes
- And, for a little sweetness, some mangoes and berries.
Back home, the real fun began. I washed everything meticulously – gotta get rid of any dirt or, you know, whatever else might be lurking. Then came the chopping. And chopping. And more chopping. It’s kind of therapeutic, actually, just you and your knife and a mountain of veggies.
Making the Magic Happen
I’m no chef, but I do have a few tricks up my sleeve. For the base, I decided to go with a simple lettuce wrap situation. Big, crisp romaine leaves – perfect for holding all the goodies.
I sliced the bell peppers and cucumbers into thin strips, diced the avocados, and halved the cherry tomatoes. The mangoes, I cubed – because who doesn’t love a little sweetness in their life?
Now, for the dressing. I’m not a fan of those store-bought, chemical-laden things. So, I whipped up a quick and easy concoction of my own. It was just some olive oil, lemon juice, a pinch of salt, and a dash of pepper. Simple, yet delicious.

The Final Result
I laid out the romaine leaves, filled them with the chopped veggies and fruits, and drizzled everything with my homemade dressing. And there you have it – a raw food feast!
